It involves evaluations from both the general public and experts, similar to the Michelin Guide, to select the best restaurants. The list of Blue Ribbon restaurants can be found on the official website, categorized by the number of ribbons and region. One ribbon signifies a place worth revisiting, two ribbons indicate a place worth recommending, and three ribbons represent a restaurant with exceptional culinary skills. Notably, three ribbons signify an objectively evaluated establishment by experts. Nationwide, there are approximately 40 three-ribbon restaurants, around 420 two-ribbon restaurants, and about 2,000 one-ribbon restaurants. Selected restaurants receive a certification sticker. The selection criteria and internal evaluation standards are confidential. Restaurants seeking promotion can apply through the website, but they must pass internal evaluation and inspection to receive the certificate and sticker.
